Dom's Gourmet Sausages

DOM’S, although my name, has become something much more. When I first realized the demand for good quality sausages in Hanoi, I set to work. We were challenged to find ingredients and I felt it was a bit of a cliché to make “Cumberland” or “Lincolnshire” sausages. I wanted to embrace Vietnam so decided that we would not conform to traditional sausage names, flavours and ingredients but try and be as local as possible.

We use wild garlic grown on our roof top, pepper from Dak Lak and lemongrass purchased from the local market from a wonderful lady who has been given the name “the-lovely-lemongrass-lady”. Often we look for old, traditional recipes on which to base our sausages. Then we spend weekends at markets and spice merchants collecting similar – and most of the time better – flavours, and end up with something which is truly unique, delicious and ours!
